Who doesn’t love marshmallows?! We’ve put a little twist on the traditional homemade marshmallow recipe and added our Super Amazing Creamer for some extra health and beauty-boosting power!
It’s hard to resist the fluffy, sweet, pillowy goodness of a marshmallow. Of course, we know marshmallows aren’t exactly the healthiest treat – so we’ve decided to put a little superfood spin on it!
Below, you’ll find our recipe for some delicious homemade vanilla collagen marshmallows, featuring our Super Amazing Creamer. The star of this vanilla creamer is collagen, which improves elasticity in the skin, boosts metabolism, and supports joint health. It also has MCT oil (which is full of healthy fats) and hyaluronic acid (which boosts skin hydration).
While these homemade collagen marshmallows are a delicious treat on their own, you can cut them into mini marshmallows and throw them in your favorite hot drink! They’re the perfect topping for a Candy Cane Mocha or a Boozy Coffee. You can also top off your morning cup of Super Amazing Coffee with these collagen marshmallows to spice things up!
Homemade Collagen Marshmallows Recipe
We’ve taken inspiration from this homemade marshmallow recipe and put our spin on it! Here’s what you need to make your own collagen marshmallows.
Ingredients (For 24 Large Marshmallows)
- ¼ cup cornstarch
- ¼ cup confectioner’s sugar
- 2 ½ tablespoons powdered gelatin (unflavored)
- 1 cup cold water, divided
- 1 ½ cups + 1 ½ tablespoons granulated sugar
- ½ cup light corn syrup
- ¼ teaspoon kosher salt
- ½ scoop Super Amazing Creamer
Kitchen Tools
- 9×13 metal baking pan
- Stand mixer with whisk attachment
- 2-quart saucepan
- Kitchen scale
- Thermometer
- Fine-mesh sieve
- Pizza cutter or sharp knife
How to Make Homemade Collagen Marshmallows
Start by sifting the cornstarch and confectioner’s sugar into a medium bowl. Then, prepare the 9×13 pan by spraying it with a non-stick spray. Take ⅓ of the cornstarch and confectioner’s sugar mixture and dust the pan with it, shaking and tapping the pan to make sure it is evenly coated.
Pour ½ of a cup of the cold water into the stand mixer bowl, and then sprinkle the gelatin into the water in an even layer. Let it sit for 5 minutes, and if there is still any dry gelatin after that time period, you can gently drizzle on a bit more water to cover it.
While waiting for the gelatin to hydrate, pour the remaining ½ cup of cold water, granulated sugar, corn syrup, and salt into a 2-quart saucepan. Place the saucepan over medium-high heat and cover. Allow the mixture to cook for about 3 minutes until the edges begin to simmer. Once simmering, uncover the saucepan and let it continue to cook without stirring. Use your thermometer to gauge when it reaches 240°F – this should take about 8 minutes. Once the temperature is reached, remove the pan from the heat.
Return to the stand mixer and turn it to low speed. As it is mixing, slowly pour the sugar and syrup mixture from the saucepan into the gelatin mixture down the side of the bowl, avoiding pouring it directly on the whisk. Next, add the Super Amazing Creamer. Once that is poured in, gradually increase the speed of the mixer to high.
Continue whipping for about 13 to 14 minutes, until the mixture is very thick. The bowl should also feel lukewarm at this point. Bring the speed down to stir, and then slowly lift the mixer head and get off as much marshmallow as you can. Turn off the mixer.
Pour the mixture into the oiled pan. Lightly oil a spatula, and use it to spread the marshmallow mixture evenly – it will set quickly, so move fast! Once spread, use the remaining sugar and cornstarch mixture to lightly dust the top. Save the rest of the sugar and cornstarch mixture for later. Set the marshmallow pan aside, letting it sit uncovered for at least 3 hours (overnight is best).
Once set, take a cutting board and dust it with the sugar and cornstarch mixture. Use a small offset spatula along the sides of the pan to carefully loosen the marshmallow, and then turn the marshmallow out onto the dusted cutting board. Dust the marshmallow with more of the sugar and cornstarch mixture.
Take your pizza cutter or knife and rub it with oil, and then cut the marshmallow into your desired size. Dust all sides of each marshmallow with the sugar and cornstarch mixture, and then enjoy! Store in an airtight container.
