For a little bit of superfood power, we’ve added our collagen, hyaluronic acid, and MCT oil-packed Amazing Creamer to the mix. The French vanilla flavor perfectly complements the pumpkin and fall spices!

Pumpkin Spice Cupcakes Recipe

Ingredients for the Cupcakes (for 24 Cupcakes)

  • 2¼ cups all-purpose flour
  • ½ scoop Amazing Creamer
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cloves
  • ½ teaspoon ground allspice
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup white sugar
  • ½ cup butter, softened
  • ⅓ cup brown sugar
  • 2 large eggs
  • 1 cup pumpkin puree
  • ¾ cup milk of choice

Ingredients for the Frosting

  • 8 ounces cream cheese, softened
  • ¼ cup butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 375 degrees. Prepare the muffin tin by greasing it or lining it with paper cups. 
  2. In a large bowl, sift the flour, baking powder, cinnamon, nutmeg, ginger, cloves, allspice, baking soda, and salt.
  3. In a separate large bowl, beat the white sugar, butter, and brown sugar using an electric mixer. Continue until fluffy. 
  4. Add the eggs one at a time, beating well. Add the pumpkin puree and milk, and then stir in the Amazing Creamer and the flour mixture from step 2 until just combined.
  5. Evenly spoon the batter into the muffin cups, filling each until ¾ full. 
  6. Bake in the oven for about 25 minutes.
  7. Once baked, allow the cupcakes to cool for 5 minutes, and then transfer them to a wire rack. Allow them to continue to cool for another 20 minutes. 
  8. As the cupcakes are cooling, prepare the frosting. In a large bowl, beat the cream cheese and butter with an electric mixer until smooth. Adding a little at a time, beat in the powdered sugar until incorporated. Add the vanilla extract and cinnamon, and continue beating until fluffy. 
  9. Frost the cooled cupcakes, and then enjoy!
