With Easter right around the corner, we wanted to create a festive and delicious superfood-infused recipe! This spring, try out these tasty Carrot Cake Bars!
Carrot cake is the quintessential Easter treat, so we had to put our signature spin on it! If you’re looking for the perfect Easter recipe (or even just a springtime dessert!), you have to try these Carrot Cake Bars. They’re perfectly sweet, deliciously mouthwatering, and feature our Super Amazing Creamer!
Carrot Cake Bars Recipe
Carrot Cake Bars Ingredients
- 2 cups flour
- 2 cups sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon clove, ground
- 1/4 teaspoon nutmeg
- 1/2 teaspoon baking soda
- 3 cups carrots, finely shredded
- 1 cup vegetable oil
- 4 large eggs
- 1 cup pecans, chopped
Cream Cheese Frosting Ingredients (for 1½ Cups of Frosting)
- 6 ounces cream cheese, softened
- 1 teaspoon Super Amazing Creamer
- 2 teaspoons milk
- 4½ cups powdered sugar, sifted
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a large mixing bowl, stir together flour, sugar, baking powder, cinnamon, cloves, nutmeg, and baking soda.
- Add carrots, oil, and eggs. Beat the mixture with an electric mixer until it’s just combined. Stir in the chopped pecans.
- Transfer to a greased 13x9x2 inch baking pan. Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted near the center comes out clean. Cool cake in the pan on a wire rack.
- Prepare the Cream Cheese Frosting: in a medium mixing bowl, beat together cream cheese, Super Amazing Creamer, and milk with an electric mixer until the ingredients are light and fluffy. Gradually add 2 cups of sifted powdered sugar, beating the mixture well. Gradually beat in 2 to 2½ cups additional sifted powdered sugar until mixture is spreadable.
- Spread frosting over the cooled cake. Cut into bars and enjoy! Cover and store in the refrigerator.
